What is the history of you and your food truck?
I grew up in Juarez, in a family that was always cooking and enjoying food. I come from a family of amazing cooks! I went to Phoenix to study at the Arizona Culinary Institute. I worked my way up from a line cook in a pizza place, to a few fine dining establishments. I realized that this was not exactly what I wanted to with my degree. So, I decided to continue my education at NMSU, pursuing a hospitality management degree. This was around the time that I discovered my love for healthy and wholesome food.
How do you think the Co+op has shaped our community?
This was the first place in our community to provide a connection between farmers/local vendors and consumers in the area. This brought about a better, healthier food. My goal was to continue on that path with my food truck.
How do you support other local vendors?
I often get products from vendors at the Farmers Market, which I use in my food truck. I will purchase greens and sprouts from local farmers, bread loaves from Living Harvest and Yummy bakeries. I really love the relationships that are made at the Market. I am also a part of Project Mainstreet with a few other local business owners. We really have a passion for bringing people downtown to create a flourishing local economy!
Tell me about your food truck name: The Greenhaus?
I flushed out a few other names, but The Greenhaus really conveyed the idea of what I wanted to accomplish with my food. I am interested in sustainability and supporting local small businesses and farmers, and a GREEN lifestyle.
