Letter From the GM: September/October

As the summer draws to a close and fall approaches, school is back in session and the weather is cooling down, I frequently find myself thinking about family gatherings with lots and lots of good food. I absolutely love when temperatures are cool enough to really enjoy spending an afternoon making soups or casseroles, or roasting root vegetables! My favorite recipe (if you can call it that) for roasted root vegetables is super easy! I start with onion, garlic, potatoes, and carrots, and then stand in front of the produce case and gather up everything that strikes me as roastable. Things like beets, turnips, parsnips, burdock root, celery root, rutabaga, leeks, brussel sprouts, radishes, sunchokes, sweet potatoes, yams, pumpkins, butternut and kabocha squashes, kohlrabi, fennel, broccoli, cauliflower, and romanesco are all fantastic additions to the mix. After chopping up all the ingredients and combining them in a large mixing bowl, I add just enough oil (any oil you like to cook with — I have been using sunflower oil lately) to coat the veggies lightly and whatever herbs and spices strike me at the moment. I like oregano, basil, more garlic, thyme, and just a touch of salt and pepper. After mixing thoroughly, spread the mixture out evenly on a sheet pan and cook at 400 degrees for 30-40 minutes, stirring every ten minutes, until cooked through and browned. This is yummy hot or cold and makes fantastic leftovers! It is also great to bring to family gatherings.
This was my first big event here at the Co+op since becoming the General Manager (no longer the “Interim” General Manager), and I am so excited that it was such a success! I want to thank all of our amazing Staff, Board of Directors, Owners, and customers for helping make the Co+op Block Party a huge success! With the delicious aroma of roasting green chile and grilling tacos in the air, it would have been hard not to have a great day! In case you missed it, everything in the store was 15% off, and we had live music and free samples everywhere. High Desert Brewing Co. even offered delicious cold beer in the cafe!
