Slow Cooker Pork Stew with Green Chile

Total Time: 10 minutes prep, 8 hours cooking
This home-style stew cooks up easily in the slow cooker. For an even more relaxed meal, prep the ingredients the day before and refrigerate, and let it cook it while you’re at work.
Field Day Organic EVOO Cooking Spray
2 cups carrots cut into discs
1 pound small red-skinned potatoes, unpeeled, quartered
1 can (28 ounces) Field Day Organic Crushed Tomatoes with Basil, drained
1 pound thick cut boneless pork chops, cut into bite-sized chunks
1 jar (26 ounces) Field Day Organic Roasted Garlic Pasta Sauce
2 cups kale, washed and ripped into bite-sized pieces
1 cup cut green beans, drained
1/4 cup roasted green chile, diced
2 tablespoons sugar
Salt and pepper to taste
Generously spray the inside of the slow cooker with cooking spray. Add all ingredients.
Cover; cook on low for 8 hours or until pork is tender and cooked through.
Serve this warm and savory pork stew with crusty bread and a fresh salad or over rice.
